With the start of grilling season, we want to introduce you to Olive Lucy’s new line of Grilling Seasonings and Rubs that are now available at the store and soon to be available online. To kick it off, here is a simple recipe for Barbacoa Steak on the grill. Pronounced “bar-bah-COH-ah”, Barbacoa is a popular spice blend used in Mexico. It commonly involves the slow cooking of various parts of cows, goats, lamb or pork over a smoldering fire. Barbacoa is also known as Mexican BBQ. We find it to be a more of a warm and savory rub than traditional US BBQ rubs, as it contains a hand-crafted blends of chipotle, guajillo, onion, sea salt, black pepper, garlic, cinnamon, cumin, allspice, Mexican oregano and cloves.
Barbacoa is typically used on bigger cuts of meat that require low and slow cooking – like briskets, pork butts, goat and lamb. However at Olive Lucy, we find that it’s great on steak too.
Pictured are two cuts of steak – top sirloin and a flank steak. To prepare, we rubbed each steak with the Barbacoa Rub (about 1 Tbsp. per side) and then let them sit in the fridge for a few hours. Just before we were ready to cook them we took them of the refrigerator and let the meat come to just below room temperature as we heated our grill to about 350 degrees. Once the grill was hot, we placed the steaks on the grill and let them cook for about 5-8 minutes on each side, until they were cooked to our preferred temperature of medium rare. NOTES: Cooking time will vary depending on the thickness of the steak and how well done you prefer your steak. Eating raw or undercooked meat can make you sick (have to put that disclaimer in for food safety).
We then took them off the grill and let them rest for about 5-8 minutes covered. You want to make sure that you let your meat rest before you cut into it to serve so that the juices go back into the meat.
We served our flank steak thinly sliced against the grain over a nice mixed green salad with Roasted Onion and Cilantro & Oregano Balsamic Vinaigrette and grilled corn finished with our butter olive oil with a sprinkle of sea salt and our ground Tellicherry Peppercorns for a delicious BBQ meal.
